Its light pink color shows the subtle furrows of a very fine and long lasting perlage.
It begins with an overbearing floral bouquet of roses, then the ripe raspberry and
the sweet wild strawberry gently emerge, with a touch of sweet spices and a thin
finish of eucalyptus.
The palate has vigorous bubbles, the sip is fresh, salty and its backbone assures a
great length.
Refined aperitif to start, followed by a scallop dish, razor clams au gratin, risotto
with vegetables and shrimp, Chinese fried rice, seafood paella, livornese red mullets,
lamb chops, sun-dried tomatoes and, in the end, a trifle. -
