Vine: Corvina, Rondinella and other local wines which help with smells and taste

Production area: The wines are located in the hilly area of S. Ambrogio, historical part of Valpolicella. The medium age is 20 years old, some Corvina wines are 35 years old.. The soil is red and brown on the Marne of Late Cretaceous and it is red and compact on calcareous soil of Eocene

Implants: Pergoletta Veronese, with 3500 vines per acre.

Harvest: at the beginning of October, after slight ripening. It is hand harvested by selecting the best grapes.

Vinification: After an accurate drying process, in the first days of February the grape is softly pressed; the must and the pomace ferment long. Thus, after being transferred, the wine is put in big oak barrels to age. After bottling, the Amarone is refined in bottles to express its best characteristics once opened.

Matching: Strong, warm wine, it matches perfectly roast meat and venison, lamb, por; it is excellent with aged cheese and it is perfect to finish a nice meal. Open a few hours before drinking to oxygenate. Served at 18-20°C.
