Harvest: by hand, in various periods in September
Vinification: 70% of the grape is cooled and lightly pressed, while 30% of the grape is left with its skin. The statically decanted must ferments in concrete at controlled temperature.
Aging: 10 months in concrete tanks at controlled temperature.
Characteristics: the colour is pale yellow, the smell is fruity, flowery and mineral, the flavour is fresh and full-bodied. It has typical bitter almond, sage, pear and apple flavours.
Matching: it is great with the famous San Daniele ham, with salami, and sausages in general. It is perfect with seafood, fresh cheese, shellfish, mushrooms, truffle garnish, first courses cooked in the oven, omelets. It is served at 10-12° C.
