Ca'roco igt rosso veronese 2017
It is a great red wine, produced in hilly wines on dry and cobbly soil, which transfer unique sensations to Corvina and Cabernet grapes. To obtain an excellent wine, the production quality is always controlled, the grape is harvested when fully ripe and the vinification is particularly followed by. The smell complexity, with slight grass and juniper scents, is the first pleasant impact, followed by the perception of the whole and strong body.
Vine: Corvina, Cabernet, Rondinella.
Production area: All the vines are North-West of Verona, in the Sant’Ambrogio hills, in the typical area of Valpolicella. The medium age is 20 years old (it goes from 14 for Cabernet to 35 years old for Corvina) The soil is red and brown on the Marne of Late Cretaceous and it is red and compact on calcareous soil of the Eocene.
Implants: Guyot with 4500 vines per acre for Cabernet, 3500 vines per acre for Pergoletta Veronese.
Harvest: at the beginning of October, after slight ripening, hand harvested.
Vinification: After pressing and destemming the grapes, the controlled fermentation begins (from 22° to 30°C) with maceration for 15 days. After racking and transfering, a malolactic fermentation in big oak barrels follows for more than a year. Finally, after a brief stop in a tank, the wine is refined in bottles.
Matching: Thanks to its wide scents, it is perfect for truffle dishes, roast, grilled or stewed meat. It is good with aged cheese. To serve at room temperature in wide crystal glasses.
