Abruzzo Pecorino Brut
Pecorino grapes are harvested quite early, generally between the 10th and the 15th of september in order to obtain a good sparkling-wine base and alsi to mantain acidity and its peculiar freshest perfumes. Thanks to a soft crushing, and then in temperature-controlled fermentation, the must mantains all the aromatic feature of the Pecorino grape. This base wine is then carbonated by the Martinotti method in an autoclave where it remains on the lees for at least 2 months. Clarification and stabilisation take place just before isobaric bottling.
