Vine: Ribolla Gialla
Production area: in the hills of Prepotto
Harvest: by hand, in various periods in September
Vinification: the grape is cooled and lightly pressed, the must is statically decanted and it ferments in concrete at controlled temperature (a part of it macerates on the skins for a few hours)
Aging: 10 months in concrete tanks at controlled temperature
Characteristics: the colour is pale yellow, the smell is fruity, flowery and mineral, the flavour is fresh with citrus fruits, acacia, white rose and hay notes.
Matching: it is great with seafood, appetizers, soups and shellfish. It is served at 10-12° C.
